Today I'm writing on the bus in route to NYC-- Joe told me it had free wireless! So of course instead of making a powerpoint for grad school - I thought I'd update my blog, play on facebook, check email, etc. (anything besides hw). I haven't taken the bus since high school - when we used to take the bus up for the day! I thought now would be a good time to try it out again - it leaves right from Doylestown. Anyway - wanted to share my latest creation: homemade salsa! We had it for dinner the other night over chicken and pasta & it was delicious!
I used tomatoes and a jalapeno fresh from the garden. I also added garlic, corn, onion, lime juice, salt, pepper, cilantro, and yellow pepper. I can't wait to experiment more with the recipe! (hopefully this weekend)
Here is the completed dinner product! I think the salsa would be good w/anything though -- chips, crackers, bread, any meat, etc. I also did a similar recipe the other day for watermelon salsa - it's mostly the same ingredients except you use watermelon instead of tomato - it was very refreshing!!
That looks delicious, Kristin! So much better than the stuff in a jar.
ReplyDeleteAnother yummy looking meal!! You are really turning into quite the chef!! How spicy (hot spicy) is your salsa? It looks great but I don't like mine real hot -- I know I'm a wimp!! hahaha!!
ReplyDeleteThe watermelon (or any fruit one) just doesn't sound right to me -- I don't think you should mix fruit and onion, hot peppers, etc. -- but that is probably just something I have a problem with! I am sure it was very refreshing and that if I would try it I would probably like it.
Keep on cooking -- you are coming up with some great meal ideas!!
It wasn't too spicy - but I could leave out the jalapeno then it wouldn't be spicy at all! I was a little afraid to try the watermelon salsa/thought it sounded gross but I actually liked it! You girls should make some in Mesquito!
