So besides social events, exercising, playing Words w/Friends, and watching Gossip Girl - I have been trying to lose a few lbs (at least maintain my weight!!). I figured summer would be the perfect time to try some new recipes! Typically, I eat pretty healthy (but sometimes boring) dinners during the week - baked potato, grilled chicken, whole wheat pasta, etc. I loveee grilling veggies and adding them to things, same w/hot sauce & salsa! A new flavor of laughing cow light hit the shelves near Joe in NYC - is it sad I was excited by this? However, the new flavors have not made it in stores near here yet. Joe was nice enough to bring me back the new blue cheese flavor & it is DELICIOUSSSS! Here was my latest dinner creation..
This recipe is from weight watchers: toaster oven veggies & potatoes. It's just red potatoes, onions, parsley & oregano, and at the bottom was a little chicken soup broth! You also drizzle a little oil on it part way through -they came out good & recipe was def a keeper! This is before they hit the oven!
Next up was some chicken with laughing cow cheese rolled inside. The one on the left is mine -- I took the new blue cheese laughing cow and put it in the middle w/hot sauce. The other two have the original laughing cow and a piece of ham! Both are low cal & came out very tasty! I am excited to experiment more w/laughing cow. They add great flavor to anything!
And voila - dinner is served... green beans, potatoes, and chicken - about 9 WW points - delicious, and filling!
Is it sad that I had to blog about food b/c I didn't have too much else to say? Thought maybe some of you would enjoy. If I test out any other good recipes - I'll post!
Your dinner looks delicious! Are those green beans from your dad's garden?
ReplyDeleteI enjoyed your post and am going to try the potato recipe. Thanks!! Keep the good post coming!!
ReplyDeleteThank you! The green beans were frozen. Aunt Sue, you'll have to let me know if you make the potatoes/like them.. I made them again today and they were better - kept them in the oven a little longer and think I used a little more chicken broth.
